This Apple Breakfast Cake happened by accident. I went to pull oats out of our cabinet to make overnight apple oatmeal in the crockpot and I realized late one night we didn’t have enough. So, here is what 2 1/2 cups of oats will get you. A nice warm Apple Cake for breakfast. It’s just like oatmeal but you can eat them with your hands instead of a spoon.

In the meantime the first pumpkin recipe of the season are these little heavenly muffins. I doubled the recipe thinking I could freeze half. Well, that didn’t happen! They were that good!
