Festive, easy and colorful salad that is perfect for the holidays! I’m the kind of girl that even though there is a buffet of food on Thanksgiving or Christmas I still want a salad with my meal. Call me crazy, but I love fresh greens. This salad is perfect for any weeknight dinner too.
I LOVE a salad for lunch most days but as soon as late fall creeps in with crisp cool air I want something that will warm me up. I love this combination! You can certainly add more or different vegetables but this has been my go to lately for lunch. It’s so easy and one batch makes two meals. Gotta love that!
